If you want to go down your sweet childhood memory lane you sure will see beautiful cupcake stands displayed on the dinner table. This roasted marshmallow cupcake recipe is a complete nostalgic treat for you. These are soft and gooey, topped with a chocolate cake layer as a bonus. Yummy!
Tips: Warm it up to taste the melted chocolate layer between the graham cracker and the cake.
Recreate Your Childhood Memories with Roasted Marshmallow Cupcakes
3/4 cups graham cracker (ground)
1 tablespoon brown sugar
2 tablespoons granulated sugar
Pinch Kosher salt
3 tablespoons unsalted butter (room temperature)
1 cup dark chocolate chips
For Chocolate Cupcakes
1 1/2 cups all purpose flour or cake mix
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cups cocoa powder
1/2 cup oil
1/2 cup coffee (freshly brewed)
1 cups granulated sugar
2 tablespoons apple cider vinegar
1 cup water (room temperature)
2 teaspoons vanilla extract or fresh vanilla beans
For Toasted Marshmallow
3/4 cup granulated sugar
1/8 teaspoon salt
1/8 teaspoon cream of tartar
1/2 teaspoon pure vanilla extract
3 large egg whites room temperature

Ready to bake some cupcakes?
Start with graham cracker layer
Preheat the oven to 325°F.
In a big bowl, mix together, granulated sugar, graham cracker crumbs, brown sugar and, kosher salt.
Now, melt butter in a saucepan, and add it to all the dry ingredients in the bowl. Stir it well!
Prepare your cupcake pan by placing every cupcake stand liner. Add approximately a tablespoon of graham cracker mixture to the cupcake stand liner. Do spread it evenly by pressing it with the back of the spoon.
Sprinkle chopped choco chips on top of each graham cracker layer.
Now, bake at 325 degrees for 10 minutes (approximately).
Cool down the liners on the rack.
Again, preheat the oven to 325 degrees.
In a medium bowl, sift together all the dry ingredients like flour, baking soda, cocoa powder, salt, and sugar, and set aside.
Mix together coffee, oil, water, and vanilla.
In an electric mixer, add the sifted dry mixture to the bowl, and then add the wet ingredient mixture. Mix the both on medium speed until combined. Ensure there are no lumps in the mix.
Add apple cider vinegar in the smooth and lump-free mixture and again turn on the mixer on low speed.
Now, portion the batter into cupcake pan and bake at 325 degrees, until a toothpick comes out clean. Or, press the cake and if it springs back, it is all ready for you.
Unmold the cupcakes and cool these on cooling racks.
Add granulated sugar, vanilla extract, and toasted marshmallow in a heatproof bowl.
Melt the sugar through water bath technique, until everything turns into a smooth paste.
Add salt and cream of tartar.
Beat the mixture with an electric beater on medium-high speed until stiff peaks are formed.
Pipe the cream on the top of cupcakes.
Decorate Cupcake Stands
Add some ribbons or lace to the stands. And, place your delicious cupcakes on cupcake stands. With a butane or propane torch, toast the marshmallow to the desired color.
