3/4 cup (165g) brown sugar
1/2 cup (125ml) buttermilk
150g butter, softened
1 1/2 cups (225g) self-rising flour
1/2 teaspoon ground cinnamon
12 baby churros
Caramel Cream Cheese Icing
250g cream cheese (softened)
80g butter (room temperature)
1 1/2 cups (240g) icing sugar mixture
1/4 cup (60ml) salted caramel topping
chocolate sauce, to drizzle
For the Churros
½ cup water
1/2 teaspoon salt
1 cup all-purpose flour
Vegetable oil 2 quarts oil for frying
1 cup water
White sugar 2 tablespoons

For the Churros
In a small saucepan, heat water, 2 1/2 tablespoons sugar, salt and 2 tablespoons vegetable oil on a low flame. Now, add some flour to the mix and stir until smooth. Preapare a batter with dough type consistency.
Heat oil to 375 degrees F (190 degrees C) for frying in a deep fryer. Pipe strips of the dough into hot oil with the help of a piping bag.
Fry these until golden; drain on paper towel to get rid of the excess oil.
Mix 1/2 cup sugar and cinnamon. Roll churros in the mixture.
Your churros are ready!
For the Cupcake
Preheat the oven to 180C. Grease the muffin tray with melted butter and line it with cupcake liners. You can buy amazing liners from a store selling cupcake decorating supplies such as stands, piping bags, accessories, etc.
In a big bowl, beat butter, sugar and cinnamon with an electric mixer, until pale and creamy. Add the eggs into the batter, but 1 at a time. Carefully, fold the mixture with soft hands. With the help of a spoon, pour the mixture evenly into the liners.
Bake cupcake for 20 minutes until it’s golden brown, or cooked perfectly from the center. Keep it aside to cool.
For the Icing
In an electric mixer beat cream cheese and butter, until smooth and creamy. Now, add some icing sugar and beat until smooth. Add caramel sauce and beat again. Pour the icing in a piping bag with nozzle of your choice.
Pipe the icing on the top of each cupcake.
Decorate the cupcake with baby churros and drizzle some chocolate sauce.
