It is a mouth-watering cake with intense flavors of coffee, beautifully balanced by the rich creaminess of mascarpone. It is a simple, beautifully layered cake that can take the center-stage at any special occasion. So, if you have a dinner party at you place, this cake is the warmest way to end the party.
A Cake for Coffee Lovers (serves – 8-12 guests)
For the Cake
Unsalted butter for greasing (room temperature)
Flour for dusting
175g (6oz) unsalted butter, softened
175g (6oz) caster sugar or dark brown sugar
3 eggs (beaten)
2 tablespoons pure Irel coffee essence
175g (6oz) self-rising flour or white cake mix
3 tablespoons icing sugar, sifted
Cocoa powder (for dusting)
250g (9oz) mascarpone cheese
1 tablespoon pure Irel coffee essence
Dark chocolate (Shaves)
Preheat the oven to 180°C, 350°F
You need to get your 2 x 18cm (7in) diameter cake tins out from the cupboard. Grease the sides of both the tins with soft unsalted butter and dust them lightly with flour. Now, line the base of both the tins with a disc of baking parchment.
Now, coming to the cake, cream the butter with an electric beater in a large bowl until soft, . Add caster sugar or brown sugar and beat until the mixture turns light and fluffy.
Now add the beaten eggs as well as Irel coffee essence to the mixture and beat it.
It’s now time to add the flour into the batter. Sift in the self-rising flour or cake mix and fold it in gently to mix. Equally, divide the batter in both the tins.
Baking tip: Make a slight hollow in the center as this will allow the cake to rise with a flattish top.
Place the tins in the preheated oven and bake for about 20 minutes, or until well-risen or till it turns beautiful golden brown and springy to touch. Now, take out the tins from the oven and let it rest on the cake rack for at least 10 minutes.
Sharpen the rough edges of the each cake with the help of a small bread knife, and then carefully shift the cake from rack to the cake stand. Allow to it to rest!
Icing for the Cake
Meanwhile, make the icing. In a bowl, add mascarpone cheese and slightly mix in the icing sugar, along with Irel coffee essence.
Now, it’s time for real fun. Place one of the cakes upside down on a plate, then, evenly spread half of the icing over it through a spatula. Layer the cake with the filling and dust the coco powder (if you are using it) on each layer.
Once you are ready with the cake, it’s the time for cake decorations. After all, it should also look delicious and temping just like its taste. Shave some dark chocolate for decorating the top of the cake and also, sprinkle some choco chips. (Use your own creativity to give your cake a fancy look)
