Dig into the Delicate Chocolate Cupcake
1/2 cup semi-sweet chocolate chips
3 tablespoons coconut or canola oil
1 cup granulated sugar
1/2 teaspoon salt
Unsalted butter (melted)
1/2 teaspoon baking soda
2 large eggs + 1 large egg yolk (at room temperature)
1 teaspoon vanilla or vanilla beans
3/4 cup + 2 tablespoons all-purpose flour, not packed
1/2 cup hot coffee
1 cup granulated sugar (or brown sugar)
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 cup full fat sour cream
For the Fudgy Butter Cream or Frosting
1/4 teaspoon salt
3 cups fine granule sweet
2 tablespoons sour cream
1 stick unsalted butter
3/4 cup unsweetened cocoa powder
3 tablespoons whole milk
1 teaspoon vanilla

For the Cupcakes:
Preheat the oven to 350 degrees. Line the baking tray with beautiful cupcake stands liners. Also, spray some oil on the tray to make it grease proof.
Melt butter and chocolate together by placing the bowl over boiling water (water bath) and stir it a bit. You can even do that in a microwave, just to make a little easy. Whisk the mixture with light hands until it is completely smooth. Let it cool down and then set aside.
In a bowl, sieve the flour, baking powder, baking soda, cocoa powder, and a pinch of salt together. Stir all the dry ingredients and keep them aside.
Now, in a large bowl, whisk together eggs, yolk, sugar, and vanilla. Beat until it’s smooth. Add the cooled chocolate mixture (butter and chocolate mixture). Now, carefully add half of the dry ingredient mixture and half of the sour cream. Fold everything together. Repeat the process until you get a smooth paste. Add some hot water mixed with coffee and mix everything.
Divide the batter in the number of cupcakes stand liners you have and pour the mix into the liners. Bake these for 16-18 minutes, or until golden from outside and cooked from inside. After this, cool them down before frosting.
Creamy Frosting – One of the Prefect Cupcake Accessories
In a big bowl, add some sugar and cocoa powder and whisk these together with a hand mixer. You need to beat the butter on medium speed until creamy for 2 minutes. Now, slow down the speed and add cocoa powder, sour cream, milk, vanilla essence, and salt.
The time you notice that you have mixed everything well, you can increase the speed until it’s light, creamy and combined. Pipe the frosting in a piping bag and show your moves on your cupcakes.
Pipe the frosting on the cupcakes and top them with cupcake accessories as desired.
Cupcakes stay quite fresh at room temperature in an airtight container for 3 to 4 days.
