For the Cake

250g essential Waitrose Plain Flour

4 large eggs

150g caster sugar

Vegetable oil (for greasing)

½ tsp salt

150g unsalted butter (at room temperature)

150g hazelnut chocolate spread

2 tsp baking powder

125ml very hot coffee (instant coffee), or boiling water

1 tsp bicarbonate of soda

For the Icing

100g icing sugar

50g cocoa powder (add some coffee)

100g butter, at room temperature

150g hazelnut chocolate spread

80g Hazelnuts (toasted in a dry frying pan and roughly chopped)

Preheat the oven to180°C. Now, line the baking tins with baking paper and brush the sides with a little vegetable oil or melted butter. If you want your cake to look a little rustic, you can grease the tins with butter and dust some flour to make them non-stick.

Put the chopped dates in a saucepan and pour coffee over them. Leave to stand for at least 30 minutes. Blend in a food processor until you have a paste, and then set aside.

Beat the sugar with the eggs and a pinch of salt until pale and creamy in color. Then, in a separate large bowl, beat the remaining sugar with the butter until fluffy and pale.

Now, add the eggs to the butter mixture along with the hazelnut chocolate spread and the date paste. Fold the mixture slightly with a soft hand.

Sieve the flour/all-purpose flour along with baking powder and bicarbonate of soda into the mixture. Slowly, fold the dry ingredients with the wet ingredients, until smooth.

Pour the mixture into the two prepared cake tins and place them in the oven for 30-35 minutes. Do check your cakes by inserting a sewer in their center. If it comes out clean, your cakes are ready. Set them aside to cool, while you make the icing.

In a big bowl, whisk the butter until soft. Slowly add the icing sugar, and beat the mixture until pale. Sieve the cocoa powder and 3 tbsp boiling water (or coffee water) and mix until you have the right consistency of the batter.

Add the hazelnut chocolate spread and mix into a smooth paste.

Sandwich your cake with the half paste and pipe the remaining frosting on top.

Finally, scatter some tossed and chopped hazelnuts; it is the perfect edible cake decoration.
