Bacon flavored sweets are all the rave right now. But who doesn’t like bacon and who doesn’t like sweets? That’s why you’ll love this recipe for maple bacon cupcakes. They’re sweet and savory and loved by everyone, except vegetarians.
Ingredients
For Cupcakes:
- 2 cups flour
- 2 teaspoons baking powder
- 2 eggs
- 1 cup milk
- 2/3 cup butter, softened
- 1 cup sugar
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup maple syrup
For Icing:
- 3 cups powdered sugar, or more if you want it more sweet
- 1 cup butter
- 1 teaspoon vanilla extract
- 1 tablespoon milk
- 1/4 cup maple syrup
- 1 cup crushed bacon
Steps
For Cupcakes:
- Preheat oven to 375 f. Line muffin tin and set aside
- In electric mixer add all dry ingredients: flour, baking powder, salt and sugar. Mix slowly.
- Slowly add butter until mixture resembles cornstarch. Follow by adding eggs one by one. Then proceed to add the rest of the wet ingredients: milk, vanilla, and maple syrup. Mix until everything is combined and batter is smooth.
- Fill cupcake liners with batter and bake for 18 minutes.
- Remove and let cool.
For Icing:
- In clean electric mixer or bowl combine butter and sugar, mixing at a low speed.
- Once well mixed add in vanilla, milk, and maple.
- Place icing into piping bag and ice each cupcake.
- Top with bacon, lots of bacon.
