Nothing can be as satisfying as baking a delicious cake, decorated with stunning cake toppers. For any passionate baker, the fragrance of fresh cakes or cupcakes is like a heaven. The warm aroma of vanilla and chocolate can make anyone happy and satisfied. So, we have come up with a refreshing recipe of red velvet cake with pureed fruit sauce giving that fruity punch to it. And, not to miss, the rich creamy cheese frosting.

For the Cake
280g self-rising flour or all-purpose flour (get it from stores offering cake supplies)
75g cocoa powder
175g butter (at room temperature)
280g golden caster sugar or dark brown sugar
3 large eggs
1 tsp white wine vinegar
85g full-fat cream cheese
75g puréed raspberry (sieved to remove seeds)
¼ tsp red food gel
150g punnet raspberry (optional)
50g butter (softened)
200g icing sugar
140g cream cheese (at room temperature)
Cake toppers (pick according to the occasion)
For Raspberries Sauce
Put some butter in a pan, add chopped berries, and sugar. And, let the berries get soft. Cool it down before adding it to the cake.
For the Cake
Heat oven to 180C/160C.
Grease and line your baking tins with a baking parchment paper or grease it with unsalted butter and then dust the tins with flour.
With the help of your an electric hand whisker, beat together caster sugar and butter until it turns light and fluffy. After this, add the eggs one at a time and beat well.
Sieve the flour and cocoa powder into a bowl. Now, carefully add half to the egg mixture and fold in with a light hand.
Mix together vinegar, cream cheese, raspberry purée, buttermilk, and food gel. Slowly, fold half of the buttermilk mixture into the cake batter and repeat the process with the both the flour mixture as well as buttermilk mixture.
Pour the mixture into the prepared tins and bake them about 25-30 minutes. In order to find out whether or not the cake is ready to serve, insert a skewer into it. If it comes out clean, your cake is ready to serve. Allow your cake to rest on the rack (there are various stores offering cake supplies such as cake stand, cake rack, etc.)
This is one of the most crucial baking parts because making the tasty frosting is an art. You need to mix the icing sugar and butter until soft and creamy.
After this, stir in the cream cheese. Fill the frosting into a piping bag and start layering the cake. Sandwich the cooled cakes together by piping the frosting and add 150g fresh raspberries.
Sprinkle some powder sugar and cocoa on its top.
Spread the remaining frosting over the top. (You can flaunt your baking skills by piping the frosting in your style.)
Add some cake toppers and shaved chocolate to make your cake look like a beautiful art piece.
Note: You can replace the raspberries with any fresh seasonal berries. Try this recipe with different flavored cakes.
